This is my first trial for dodol. I am starting with a smaller batch.
1 cup glutinous rice flour
5 cups of thick coconut milk (I am using coconut milk from can)
1 cup brown sugar
3 pandan leaves for sweet fragrant
1 tablespoon durian extract
In non stick kuali or non stick stir fry pan, cook all ingredients on high heat. If it start to bubble, lower the heat to medium. Keep stirring until it thicken and not sticky. Approximately 1 and half hour to cook. Use banana leaves to layer the dodol. Serve cool at room temperature.
Tips: Use non stick pan and wooden spoon to stir. Get arm ready to exercise.
