Pandan Cake

I want to eat cake so badly that I decided to whip up some batter and bake it in the oven. Instead of using regular flour, I decided to use a pre mix pancake batter that is loaded with whole grain and fiber from fiber one.

I mix a small packet of pancake mix with 1 cup of coconut milk, 1 egg, 1 cup sugar, sesame seeds and a few drops of pandan paste.

I bake it in the oven at 325 degree F for about 40 minutes. Wow! It turned out great. The cake is very light and I can taste the grains. It goes well with a cup of coffee or hot chocolate.

Now, this is what I call "resourceful"! Imagine turning a pancake premix into a pandan cake.

This is the beauty of cooking/baking - the ability to improvise. This is why I enjoy this so much.

This is one of those scents that I miss so much from the Philippines. Is pandan paste made out of pureed leaves?

Cilantro, I like to cook something that is easy to prepare and yet taste good.

Jude, I use ready to use pandan paste that I bought from the Asian grocery store.

Hi Zu,

I am inspired by you to try baking a cake using pancake mix as well.

A quick question - how many grams is your packet of pancake mix?

The pancake mix that I have comes in a large box instead of individual packets, so I would probably have to measure out a portion of the pancake mix in order to bake the cake.

Pebbles, I should be more specific isn't it ....well the packet contain about 1 cup pancake mix.
